About the Royal Agricultural Winter Fair
Since 1922, farmers, growers, producers and homesteaders have gathered from all across Canada in Toronto to showcase their very best agricultural products and livestock at the largest indoor agricultural and equestrian event in the world.
Every November, approximately 300,000 people come to The Royal to celebrate the very best food, livestock and horsemanship that Canada has to offer.
The Northern Ontario Heritage Fund Corporation, the Ministry of Northern Development and other Ontario ministries have maintained a regular presence at The Royal in support of our clients in the agriculture and livestock sector, and to connect with others in the industry and expand awareness of our programs and opportunities in Northern Ontario.
These recipes have been shared by some of the NOHFC’s clients at the 2023 Royal Agricultural Winter Fair featuring northern agri-food products.

Hogan's Homestead: Maple Chipotle Wings

Prep time: 10 minutes, Cooking time: 1 hour, Servings: 2
- 2 tablespoons cornstarch
- 1 ½ tablespoons ground dried chipotle pepper
- ½ teaspoon salt
- 2 pounds chicken wings
- ⅓ cup Hogan's Chili Infused Maple Syrup
Instructions
1. Preheat oven to 375°F. Grease a large baking sheet.
2. Whisk cornstarch, chipotle pepper and salt together in a large bowl.
3. Place chicken wings into the chili mixture. Stir until wings are evenly coated. Arrange wings about an inch apart on the prepared baking sheet.
4. Bake until golden on top for about 30 minutes. Turn wings over and bake for an additional 20 minutes, until wings reach an internal temperature of 165F.
5. Remove wings from oven and drizzle with maple syrup.
6. Return wings to the oven and bake until deeply golden, for about 10 minutes.
About Our Client
Spencer and Erica Hogan started Hogan’s Homestead as a hobby, with a dream that one day it would grow with their family. One tap turned into two, then turned into hundreds. Hogan’s Homestead boils their maple syrup “to perfection” and are proud to have a 30,000-tap operation in Northern Ontario based in Sault Ste-Marie, with a sugar shack located in Goulais River.
Northern Wildflowers: Wild Blueberry and Bergamot Scones

Prep time: 10 minutes, Cooking time: 20 minutes, Servings: 8
Ingredients
• 3 teaspoons dried Northern Wildflowers Wild Bergamot
• 2/3 cup boiling water
• 3 cups all-purpose flour
• 1/3 cup butter, melted
• 1/3 cup brown sugar
• 1 tablespoon cornstarch
• 2-1/2 teaspoons baking soda
• 1/4 teaspoon salt
• 1/2 cup salted (cold) butter, cubed
• 1 egg
• 2/3 cup heavy cream
• 1 teaspoon vanilla extract
• 2 teaspoons icing sugar
• 2/3 cup Northern Wildflowers Wild Blueberries
• 1 tablespoon cream or milk
Instructions
1. Preheat the oven to 425 °F. Prepare a baking sheet with parchment paper.
2. Add 2 teaspoons of loose-leaf, dried wild bergamot to a tea infuser or loose-leaf teapot. Add 2/3 cup boiling water and steep for 3-5 minutes. Remove the spent bergamot and allow the tea to cool.
3. In a large mixing bowl, add the remaining teaspoon of bergamot, flour, brown sugar, baking soda and salt. Lightly mix the dry ingredients using a fork or your fingers.
4. Cut the butter into the flour mixture, using a fork, a pastry blender or your fingers.
5. Add the egg, cream and vanilla to the cooled tea and whisk to combine. Pour the mixture over dry ingredients and stir until combined. Gently fold in blueberries.
6. Turn the mixture out onto a lightly floured surface. Shape into a disk that is approximately 1 ½ inches thick. Cut into wedges and place on the prepared baking sheet, with the wedges slightly separated. Brush with cream/milk and sprinkle liberally with
icing sugar.
7. Bake at 425 °F for 18-20 minutes or until the scones are golden brown.
Tip: Fresh-picked leaves and flowers can be dried in the sun, a dehydrator, oven, or microwave.

Rheault Distillery: Sinful Sunrise

Prep time: 5 minutes, Servings: 1
Ingredients
• Ice
• 2 ounces of Orangina or San Pellegrino Aranciata
• Peels of orange to decorate
• 1 ounce of Sinful Cherry Liqueur from Rheault Distillery
Instructions
1. In a chilled champagne glass, add small ice cubes to the brim.
2. Pour in 2 ounces Orangina or San Pellegrino Arancia.
3. Add 1 ounce Sinful Cherry Liqueur from Rheault Distillery.
4. Add the orange peel and serve.
About Our Client
Rheault Distillery is a family business, owned and operated by Mireille Morin and Marcel Rheault (husband and wife). They have co-owned Rheault Distillery since its founding in 2009.
The Rheault family hand-bottles the product themselves. The distinctive bottle design, featuring a loon drawn by Canadian Aboriginal artist Stephen Peltonen, highlights the features Rheault considers unique about the product — particularly the pristine, cold water represented by the frosting on the clear bottle’s lower portion, as well as moose print tracks across the bottleneck top, a tribute to the distillers’ hometown, the self-acclaimed Moose Capital of Canada, Hearst, Ontario.
